Asparagus and Yucca Roots





Fresh Asparagus
roasted and smothered
in butter and garlic
with sea salt.





Yucca Root
boiled in
NOTHING
but plain'o water.

A naturally buttery and semi-salty dish
that is very similar to potatoes ...
but better.


Thick, juicy medium-rare sirloin steak ...
grilled on open flame
three minutes each side.


Put it all together, and you have ...
supper time at Mama's.

Voila!

  2. Looks fabulous! Love aspargus...but I've never tried yucca root. Where did you find the yucca root? Wonder if HEB would have it....that's my favorite place to shop for produce so I'll see if they have it. How long do you boil it? Is the nutrition content similar to potatoes as well?

  4. Crystal: YES! The yucca root can be found at HEB ... I live less than two blocks from the Abilene store ... I boil it down into its own juices ... however long that takes will vary ... no butter, no salt, no nothing ... and it really IS wonderful ... try it and let me know what you think :)
